WINEMAKING NOTES  Whole berries fermented in 1000 oakl vats, left on skins for 6 months post ferment. Matured in 2000l Stockinger foudre, no filtration. 

ANALYSIS  pH3.78, TA 5.9g/l, FSO2 26ppm.
