Fruit sourced from several sites across Canberra District with 50% undergoing carbonic maceration for 5 days, then foot stomped; the other 50% destemmed and fermented in tank. Bottled soon after mlf. It’s a nouveau style, all zippy and juicy with sweet strawberry and red cherry flavours plus a smattering of fresh herbs, quite balsamic actually, plus a hint of amaro on the finish.
