The Bibi Graetz 2021 Colore is Sangiovese from old vines, but otherwise, winemaking and the oak regime is identical to the other top red, Testamatta. In this case, fruit comes from the Lamole area with vineyards at a high 600 meters above sea level. Some are south-facing but high up on the mountain. As Bibi explains: “Colore delivers power and freshness, whereas Testamatta delivers transparency and freshness.” The Colore shows the pure energy and liveliness of Sangiovese with violet, wild cherry and orange zest. The wine delivers an elegantly earthy side with a very delineated mouthfeel driven by very fine, silly tannins. This is a beautiful wine with delicately sweet cherry on the finish. Bibi has been making little changes to this wine over the years (other than giving it a new winery home in Fiesole) to capture an ideal or benchmark for Sangiovese. His 2021 is his best wine yet. Production is 35,000 bottles, which is slightly lower compared to the last vintage. Drink 2024-2045.

Tasting Notes

Deep dark red black tinged colour with a dark red hue. Expressively scented with aromas of spicy red currants and red cherries tinged with a mix of violets, dried herbs and earth emanating from the glass. Hints of cedar and tobacco are also apparent. Intense, beautifully refined, focused and sculptured, the mid weighted palate is richly flavoured with delicious red currant and red cherry fruits which sit over a spicy back drop of earthy graphite like characters, tobacco, pencilly cedar and infusions of dried herbs. Muscular and elegant in its feel with a tightly knit tannin framework. Good tension with a long red fruited finish showing great vitality and force. Cellar 10-15 years.

Bibi Graetz, the sangiovese in all its glory In two decades since his first vintage release, Bibi Graetz has become one of the brightest lights in Tuscan winemaking. This is primarily thanks to the superb quality of his pure sangiovese. Bibi Graetz draws on old vines, which give his best reds depth and soul. Red grapes are cultivated on the hillsides above Florence and sourced from prime sites in the Chianti Classico region, such as Montefili and Lamole. Colore is the highest expression of Bibi Graetz dream, from very old vineyards of Sangiovese. Poor soils mixed with sand and stone and high altitude create the perfect terroir for a wine that tells a lot about Tuscany and its ancient taste. Only the best few barrels of the whole production will become Colore. The 2021 vintage Weather conditions The 2021 vintage will be remembered in Tuscany as a powerful one. Concentration, so the grapes were smaller beautiful, airy. It’s kind of a mix between 2015 and 2020. Where you have on one side the character that we have been developing in the last years, this freshness that is really dominant and on the other side you have the opulence, generosity, a kind of “flesh-ness” in the wine. The season started with a mild and rainy winter. After some cooler temperatures in April, spring continued amicably as May brought enough rain to allow the water supply. Moreover, high temperatures and dry weather conditions in August helped the phenolic ripeness. The vines set a beautiful crop assisted by some rainfalls and cooler temperatures in September. Tasting notes “Colore really is our maximum expression. When you taste Colore the first thing that comes out is the flowers. It’s an explosion of the senses. It’s like spring. You go in the fields and you have perfumes, energy, power, beauty, sunshine...You have everything! And it’s all in the Colore 2021.” Bibi Graetz
