Tasting Notes

COLOUR: Dark Cherry Red AROMA: Rose petal perfume, sweet spice, red berries, leather couch, aniseed. PALATE: Cherry and raspberry fruit, pine needle and clove spice, reel you in. Caramel, tangerine and vanilla, mint. The palate is bold and succulent, fine sandy tannins, finishing with a savory and earthy edge. VEGAN FRIENDLY WINE Food Match: Peking style duck, marinated in Sichuan pepper, ginger and soy – steamed then wok fried - served with Mandarin pancakes, cucumber, spring onion and Hoisin.

Winemakers Note

The fruit was hand-picked and delivered to the winery on March 16, bunch sorted, gently destemmed and cold crushed to a 2 tonne open top concrete fermenter. We aimed to retain as many whole berries as possible, with 10% whole bunches added, then gently warmed to ferment over 2 days. Once fermentation had commenced the must was gently hand plunged 2 times every 24 hours. During ferment the must was kept between 22-26 degrees. Primary fermentation took place for 10 days. Once the wine was dry, we pressed to tank where the free run juice and 50% pressings were combined. The wine was then transferred to 2 x 1 year old 400 litre French oak puncheons. The wine was racked and returned once during the 17 months of oak maturation. We hand bottled on site at winery, October 16 2019, minimal So2 added, cork and wax sealed.
