It's time to go deep into the Wine Collective cellar. What's in there? All sorts of aged delights, but usually in minimal quantities. A six-pack here, ten cases there, that sort of thing.
Then, a small volume of 2019 Procella Cabernet Sauvignon lobs into view, and it feels like finding a $50 note in your jacket.
This aged red treat comes from Coppabella Wines, the Halliday 5-star-rated Tumbarumba producer run by Moppity's Jason & Alecia Brown.
The Procella range (that's 'Tempest' in Latin, which fits nicely for any cool climate winery) draws both from Tumbarumba and Hilltops fruit, with this Cabernet drawn from Moppity's suite of vineyards in the Hilltops cherry country.
And what a smart wine it is too. Indeed, if you're not on the NSW cabernet bandwagon yet (and if not, why not?), then this is a great place to start your journey. There's a perfect mix of power and restraint, dark chocolate and earth width and weight, but it is married to a mediumness that makes it even more appealing.
At four years old, it's in a wonderful place too. A cedary, ripe-yet-not-heavy, berry-laden red of lovely balance and class.
