2019 Brookland Valley Estate Cabernet Merlot

Classic Margaret River characters of blackcurrant, plum and fruit cake flavours are complemented by hints of milk chocolate and bay leaf. French oak spice and fine powdery tannins give the palate an elegant structure and sustained length

The fruit was hand-picked to maximise quality and to allow for hand sorting in the winery. Fermented in open top fermenters with indigenous yeast, for ten days. The wine was gently pressed off skins in a basket press, to complete alcoholic fermentation in stainless steel tanks. The wine was then inoculated for malolactic fermentation and racked to barrel. The wine spent a total of 15 months maturing in new and seasoned French oak. The component wines were blended and gently fined immediately prior to bottling. This is a small-volume wine that was handled separately through its life and speaks of the region where the grapes were grown.
