Cool season Shiraz, harvested from a late ripening block. 10% of the Free run juice drained directly from the harvest bins to 5-year-old French Oak barriques and allowed to undergo fermentation initially with wild yeast to build complexity and texture, then inoculated mid-way through fermentation. Remaining free run juice was cool fermented in stainless steel. Once fermentation was complete the wine was racked from barrel and blended with the stainless tank and prepared for bottling to maintain the wines freshness and purity
