Winemakers Note
Geological characteristics On the limestone plateau of Saint-Émilion, located around 85 meters up from the Dordogne, composed of clay-limestone soil on top of chalk with marine fossils. Growing methods Pruning down to 6 buds, thinning, leaf stripping operation on the sunrise side of the rows in late June, and a second one on the sunset side in mid August. Grapes are picked and sorted by hand. Vinification In order to make wines that are adap ted to the potential of the harvest, Pavie Decesse is vinified in temperature-controlled wooden vats; the vatting lasts 35 days. Malolactic fermentation is made in barrels. Maturing In 70% new oak bar rels and 30% one- wine wooden barrels. Final blend at bottling time.
