20% whole bunches, fermented wild to start, before inoculation, as is the way here. Matured in quality French wood (20% new), yet this lacks tannin. Despite attractive notes of boysenberry, peppermint, anise and clove, it feels almost soupy in the mouth, with a gentle tingle of acidity.
