2022 Saint & Scholar Chardonnay

The Adelaide Hills experienced another exceptional vintage on the back of one of the best ever in 2021. A wet winter and spring, followed by a dry and mild summer created a long ripening period which led to excellent flavour development whilst maintaining natural acidity. Harvested by machine in the cool of the morning when the fruit is at its freshest, the grapes are then crushed and lightly pressed with only the free run juice collected. The juice is then allowed to settle for a couple of days, followed by racking and fermentation for 10 – 12 days. The wine spends 3 months in 2- and 3-year-old French oak puncheons for some subtle complexity.
