Tasmanian sparkling is here to fill the Champagne shortage and, with the level of quality at this price point, Pipers Tasmania will win a few hearts. With delicate aromas of white blossoms, seashells selected from the sparkling morning sand, green apples and a hint of freshly baked soft white bread, it hits all the targets of cool climate fruit and secondary fermentation in bottle. The bubbles are fine and elegant with fleshy citrus fruits and white nectarines. It feels creamy and ripe before finishing with a zesty lemon acidity. Drink as an aperitif or pair with fresh seafood and lots of crunchy, hot chips by the shore.

A perfumed wine with peach, tangerine and lemon balm. The traditional method lees work adds some honey toast, baked madeline and almond praline, below the abundant fruit profile. It’s nectarous and giving with a firm bead and dollop of sweetness countered by some nutmeg spice, that leaves the palate feeling dry. The added boost of steep acidity means that after one sip, it is once again, refreshed. Drink now with truffled arancini and a snowfall of parmesan.
