Top notch sparkling, would easily compare with some bubbles from neighbouring Champagne. Clotilde's make her Cremant de Bourgogne using the "Methode Traditionnelle” like the Champenois, the result is simply beautiful. 18 months "sur lattes" before to being disgorged. No dosage. Serious stuff.
