Tasting Notes


Deep ruby red with youthful purple hues. Aromas are classic Cabernet—hints of green tomato leaf, cigar box, eucalypt, and dark fruits. The French oak sits in the background, offering notes of freshly sharpened pencil shavings and a touch of vanilla. Layers of Barossa mettwurst and black olive add complexity. The palate is dense for Cabernet, with a rich expression of blueberries and blackberries. The finish is all fruit, with structural tannins that are present but not drying. Subtle leafy green notes appear on the palate, but the dominant characteristic is sweet, ripe fruit. The tannins take over on the finish, extending into a fine, long conclusion.

Grant Burge has been synonymous with quality Barossa wines for many years, and his ability to source the best fruit from the region ensures the highest quality. The Idle Hill Growers Series is a nod to Burge and his work. His name is now firmly on the label in recognition of his great job sourcing fruit for these superb wines. These wines, exclusive to TWC customers, are a testament to our commitment to bringing you the best. 

Grant takes us to one of the Eden Valley’s latest ripening vineyards here with this complex and powerful Cabernet. Sourced from old-vine fruit at 500m near Williamstown, this Cabernet politely reminds us just how good the Barossa can be for this variety. It’s drenched with blueberries and blackcurrant, peppered with cinnamon, bay leaf and tobacco and finesse with a hint of menthol and peppermint. The oak makes it stand too, having spent a full 18months maturing on the finest new French oak (30%).

Our mantra was to craft a Cabernet that could rival the best of the old Corryton Park label, and here Burge and the team have nailed the brief. There's structure and generous flavour, and the potential to cellar for a solid 5 - 10 years at least. This is as classic as the Barossa gets.
