Perse Latitudes After a first life in retail marketing, Gérard Perse decided in the 90's to satisfy his passion for wine. His future will be written in Saint-Emilion, his favorite place. He acquired the châteaux Pavie, 1er grand cru classé "A" of Saint-Emilion, Pavie-Decesse, Monbousquet, grands crus classés of Saint-Emilion and then Bellevue-Mondotte, still in Saint-Emilion, and Clos Lunelles in Castillon, Côtes de Bordeaux. Because wine is enhanced both by the location and the dishes associated with it, the Perse family bought the Hostellerie de Plaisance, a mecca of gastronomy and lifestyle, which later became the Hotel de Pavie and its double michelin-starred restaurant, the Table de Pavie . Since 2020, the collaboration with Yannick Alleno, a leader of French gastronomy, symbolizes a new dynamic and the great ambition carried by the family.
