Geological characteristics A partial enclave of Château Pavie Decesse on the Saint-Émilion clay-limestone plateau, the terroir is located 80m above the Dordogne valley. Bellevue Mondotte’s terroir combines : meagre soil, southfacing sun exposure, excellent natural drainage thanks to its hillside location. A great vineyard ! Growing methods Green harvesting, with a first leaf-stripping operation on the sunrise side of the rows in late June, and a second one on the sunset side in mid August. Vinification Grapes hand-picked then sorted. Alcoholic fermentation started up naturally in temperature-controlled wooden vats. 35 days maceration. Malolactic fermentation in barrels. Maturing In 70 % new oak and 30 % one-wine wooden barrels. Final blending at bottling time.
