The 2016 Adrianna Vineyard Mundus Bacillus Terrae is from a cold and rainy El Niño vintage that broke the mold of typical Mendoza weather. The grapes were picked a bit later and achieved a slow, perfect ripening while retaining very good freshness. They used 50% full clusters in this cooler year. The wine was pressed before it finished fermenting (in concrete), and the juice—without skins, pips or stems—finished fermenting like a white in the foudre. The two bottles I tasted were both showing a bit dizzy, possibly from the recent bottling, with the aromatics coming and going, sometimes showing a little open. But the palate shows the core of acidity that lifts the wine and provides incredible freshness; the tannins are ultra refined, and there is great overall balance. Winemakers Note

THE WINE The Catena Family is entering its second century of winemaking in Mendoza, Argentina. Named after Nicolás Catena Zapata’s youngest daughter, the Adrianna Vineyard is located at almost 5,000 feet elevation in Mendoza. The soils in this 1.4 hectare parcel are filled with scattered limestone and marine deposits that covered the region millions of years ago. The limestone layers are well-drained and particularly rich in rhizobacteria, the microorganisms that help vine roots withstand stress and absorb nutrients. Thus, the name “mundus bacillus terrae” or “elegant microbes of the earth.” TECHNICAL INFORMATION Fermentation: 75% of the beginning of fermentation in Concrete (50% whole cluster) and 25% of the completion of fermentation in Oak Foudre (just juice). Max. Ferm. Temp. 25-30° C, 8-13 days maceration. Aging: 18 months in barrel, oak treatment is decided according to the vintage characteristics. French Oak.
