Sourced from Gingin clone Chardonnay across three vineyard blocks in Margaret River, Western Australia. The fruit was hand-harvested at optimal ripeness and whole-bunch pressed before wild fermentation in French oak barrels, with 200–450 NTU juice solids contributing texture and complexity. Following fermentation, sulphur dioxide was added to prevent malolactic fermentation, preserving the wine’s natural acidity and freshness. Individual batches were matured separately for nine months with regular lees stirring before careful barrel selection and blending, followed by stabilisation, filtration and bottling in December.
