From a single northeast-facing plot of Pinot Noir in chalky, intense Aÿ comes this individual Coteaux Champenois, a white wine from whole-bunch pressed Pinot Noir, vinified entirely in stainless steel. The transparency of the style is startling, allowing a crystal-clear taste of Mirabelle plums, ripe lemon and white pepper, with a gentle lining of almond and sourdough bread richness from ageing on lees in tank. There’s an energising, sapid and stony pull through the finish which really speaks of this noble chalk terroir. With time in bottle (these are sealed with a screwcap) it could develop some real interest.

This cool, savory white has aromas of toast, graphite, oyster shells and grapefruit rind. Medium-bodied and textured, with fresh acidity and an almost smoky minerality. Pinot noir. 100% stainless steel vinification.
