Vincent makes two ratafias via the solera system, Chardonnay one and Pinot Noir. Both ratafias are delicious and very different yet, I couldn’t decide which one I liked better. Solera started in 2011, the batch is LOT: RAT 1. Gault & Millau paired this wine with a cigar and I can’t agree more. It’s a sweet fortified red wine from Champagne. This sentence must equal deliciousness. Spiced red plum with amaretti biscuits, toasted hazelnuts, sweetened black tea with orange slice, cinnamon and ginger, dried red flowers. Amazingly, it’s sweet but not sweet. Thanks to the cleansing bitterness, just like in an amaro. Fantastic.
