Offering lemon curd and green apples on the nose, this NV Adelaide Hills Blanc de Blancs is lively and fine, with a chalky vein of phenolics that thread through the palate. In the mouth, the wine is plump, the mousse soft and all things in good place. Very fresh. The dosage sits well, but any more and it would be obvious—it adds to the polish and slick of the wine currently.

What it lacks in finesse, it makes up for with freshness and a drink-me-now persuasion. Lemon-lime sorbet, a smidge of biscuity-autolysis and lively acidity to the very end.

A pretty sparkling wine that delivers a good sense of stone fruit, some sweet, creamy characters, a little crackle of honeycomb, some brioche and preserved lemon. The texture is a bit slick and soapy, bubbles a little lazy, the finish a touch fashioned out of hay and straw. In all that, an uncomplicated drink emerges. Just missing some get-up-and-go and complexity.
