Sparkling Chardonnay from a forward thinking Goulburn Valley producer. It's crown-sealed, and made in the ‘naturel’ style ala a Pet Nat, with secondary bottle fermentation. There's loads going on here - chalky, lime, bath salts, brioche and green apple. 

Tasting Notes

French (naturellement), and hand selected Chardonnay grapes for their classic sparkling style and the perfect balance of citrus acidity and white nectarine flavours. Then we added some fizz and undertones of brioche via some bottle conditioning (fermentation in the bottle). And because we picked the fruit early to accentuate the freshness and vibrancy of its flavours, we finessed the edges with a dash of residual sugar to create that perfect harmony between sweetness and acidity.
