This wine is a blend from Northern Margaret River sites, 100% Gingin clone. Selectively harvested and delicately pressed. 24hrs cold settling to ensure a high level of natural solids remain for fermentation. A combination of wild and cultured yeast was used. 100% barrel fermented in french oak barrels. Individual barrel selection for the blend and a very light fining prior to bottling.
