This unique micro-climate and soil profile contribute lots of bright, fresh red fruit, aniseed, red flower perfume, and fine tannin on an acid frame.
We set out to make a fresh, crunchy, fridgeable style of nebbiolo for late summer and Autumn drinking.
Fermented with wild yeats, 50% in open fermenter and 50% on skins in a German plastic egg. Hand plunged twice a day and pressed off early to retain freshness, brightness and a lighter colour.
Bright pink in the glass with earthy and lifted perfume on the nose, the palate is bright and fresh with a high tone, good acidity and surprising soft tannins.

This has seen 50% fermented in a 1t open fermenter and 50% on skins in a ceramic egg. A very light, bright crimson. Bright and lifted with red fruits, blood oranges and some rose petal. Light and bright on the palate too, with gently crunchy tannins and good acidity rounding out a pretty and delicious wine I'd serve at around 14 degrees on a warm night with grilled lamb cutlets. Or anything really.
