Vineyard: ChaLou, Orange. N.S.W
Soil: Ordovician material approximately 460million years old. It contains basic volcanic material; sandstone, siltstone breccia and conglomerate derived from basalt and andesite
Season: A long cool season. A wet and cool srping followed by a mild and reasonably dry summer. Vines were shoot thinned and leaf plucked to reduce disease pressure and keep canopies open and dry.
Winemaking Notes:
Grapes were left to cold soak with hand-picked 30% whole bunch for 3 days prior to fermentation with native yeast.
Some time of skins post fermentation to build savoury interest and depth before being pressed.
Racked to barrel with fine solids for MLF.
Minimal filtration and sulfur additions prior to bottling in June 2023. No fining = Vegan Friendly
