2022 Saint & Scholar Shiraz 12 Pack

The 2021 vintage was almost perfect, with a long, cool growing season, plenty of rain falling at the right time and slow ripening conditions resulting in flavoursome berry development. This bright cool climate single vineyard Shiraz (or Syrah) was harvested in the cool of the morning in early April. The wine was destemmed and cold soaked for 12 hours, then warmed with yeast added to start fermentation. The ferment was pumped over twice a day for 7 days, providing air, but also making sure the wine didn’t become too tanic. Following fermentation the wine was pressed, settled for a day and then matured in French oak barriques for 7 months of which 10% was new.
