Tasting Notes

2000 bottles produced. A macerated Chardonnay, played entirely on freshness and drinkability make entirely in cement, to guarantee its freshness. Maceration on the skins, then a white as if it were a red, harvest three or four days early to keep the freshness close, to preserve the alcohol. Aged on lees in concrete; crunchy nose reminiscent of lime peel and pink grapefruit; the mouth is acidic, full of tension so as to have the sensation of biting the grapes - unfiltered.
