The 2021 Pedro Ximénez Casa del Inca is a young sweet Pedro Ximenez from sun-dried Pedro Ximenez grapes from Montilla-Moriles picked very ripe and left to further dehydrate under the sun for a number of days. The very thick and sweet must fermented in concrete tinajas. The wine was fortified to 15% alcohol and has a whopping 430 grams of sugar. It's honeyed and ripe, with notes of brown sugar and molasses, dates and golden raisins. It's sweet and velvety, young and tasty, without great complexity but really pleasant and moreish. 2,406 bottles and 1,932 half bottles were filled in 2023. The price listed is for a full bottle.
