This Cabernet Sauvignon is crafted in the ‘old school’ style. The fruit is destemmed and fermented in open fermenters for 5 to 7 days, with pump-overs twice daily, carried out by hand. The grapes come from vines planted in 2000 at THE Utopos Vineyard, a project by Kym Teusner and Neil Panuja, producing wines that showcase the unique character of the Barossa Valley. After fermentation, the wine is aged for 12 ymonths in approximately 30% new French oak, complemented by a mix of seasoned oak puncheons (550L) and hogsheads (330L).
