Seven varieties of Champagne as a field blend coteaux. Yes thanks. As with many coteaux, this leans into leaner, greener spectrums, but savoury elements do help out. Jura-esque saline and sherry vibes, but with a green spree of tangy citrus, apple, ginger and some waxy, wild honeycomb notes. Pickled ginger, preserved lemon. Energetic, light weight, frisky. A beautiful aperitif style. Lean and racy. Delicious drinking.
