The 2019 Vintage Blanc de Blancs is a triumph. I can't think of a better sparkling wine in New Zealand. Having spent five years on lees, this organically grown Chardonnay-based fizz has developed layers of nuance. It's elegant, pure and vinous with pure apple, ripe citrus, butter- and honey-lathered toast and salted almond intrigue. Extended lees-aging has transformed the mousse and integrated it remarkably well. This delicately handled, deeply satisfying sparkler has rewarded patience.
