2011 Swift Sparkling Blanc de Blanc

Attractive & bright mid-straw colour. It has a very fine bead which is crucial to the texture of the wine and the tension on the palate. The aroma is a little more reserved than the Cuvee but will build with time in the bottle. Citrus and floral flavours with fine line of acidity. Hints of pinot red fruit in the background. There is excellent freshness & tension on the palate.

The blend is 60% chardonnay & 40% pinot noir. We tirage bottled the wine on-site. The subsequent secondary bottle fermentation and maturation took place over 19 months.
