Risky Business has been sourcing prosecco from the King Valley for nearly 10 years. There's an enviable consistency to style. It's seen here from the bright, just-cut green apple and citrus summery scents through to the utterly delicious lemon sorbet crunch and bubbly zing on the palate. And dry ... prosecco looks so good when it's dry and clean-cut.

Plenty of sparkly oomph and bubbly action here, which is just what we like to see in a youthful prosecco. Clean, brisk and summery in shades of citrus – lemon and grapefruit pith – with red apple and tart quince, it rollicks and rolls along at a fast pace. Delicious.

Picture-perfect non-vintage prosecco that amplifies the best of its many sparkling qualities. From the cut apple, quince and pear aromas to the energy that flows on the palate courtesy of the lively lemon-ness of it all – lemon sorbet, zest, lemon fruit tingle – this is top summer drinking. Zippy, clean acidity accentuates and enlivens.

Machined harvested at night, cool fermentation with Champagne yeast, small amount of lees contact. Bottle-ready wine is fermented for a 2nd time in a pressure tank, filtered, then a small amount of dosage. So easy to get to love. Simple enjoyment assured with delicious lemon sorbet, citrus, fresh-cut apple and harmonious slurpy, bright acidity. Does the grape proud.

Machine-harvested fruit, fermented in stainless-steel tank with inoculated yeast, left on light lees until bottling. Stays true to its award-winning style which celebrates the grape's laser-like purity of flavour. Citrus blossom, lemon sorbet, mandarin peel and green apple aromas. Super-clean sherbety acidity – it positively tingles – with citrus and green apple intensity. Does the grape proud.

Prosecco has flourished in the King Valley in Victoria, very much a home away from its Italian home. It seems that all our best examples hail from here. The second fermentation takes place in tank and there is a small dosage included. The colour is a steely pale lemon. The nose gives us appealing notes of florals, pears, lemon curd, lavender and lychees. This is bright and fresh with vibrant acidity and a clean finish. Mid-length, with a very gentle sparkle, it is attractive drinking now. Given a light chill, this is the perfect summer afternoon’s drink. Good value.

It sits light on the tongue but there's a bite of citrus-shot flavour to the finish; it swings easily through the palate and then gives you something to hold onto as you swallow. They've done pretty well here.
