This always comes with a gloss of sugar, and it works well, especially with lightly spicy or fatty dishes. It’s also very delicious served properly cold with those morsels, retaining fragrance and detail while energising the refreshment factor. Makrut lime, lemon sorbet (especially when chilled well!), lemongrass and jasmine. The sugar provides ballast, the acidity drives the show. Nice.
