This is somewhat made in a feinherb style, or thereabouts, with 19g of sugar. It’s swiftly swallowed up by the acidity though, sitting in neat balance. Lime blossom, green apple, a hint of jasmine and a stony mineral note. Lime pith, sherbet and talc on the palate, the effect detailed, pure and quite moreish. This works very well, and it would match with lots of different foods – ceviche, fish tacos, larb gai, som tam … and the poise is such that it drinks nicely solo, too.
