All five grape varieties were picked on the same morning and pressed to tank. From there they were cold settled before being rough racked. Natural fermentation took place and sugar was stopped at 26.1g/L using cooling. CO2 was added during the bottling process at 3.6g/L.
The Wine
This wine is designed to be fun, so don’t take it too seriously. It has a hint of sweetness and a spritz that leaves you feeling refreshed and wanting more. There may be some 'wine diamonds' or crystalised tartraits in the bottom of the bottle, but don't worry, they're safe and a byproduct of our minimal intervention winemaking - Dangerously smashable stuff!
