Wild fermented; bottled without filtering or fining. A really interesting and pleasing flavour profile that leans into bitter cherry, amaro-like characters, juniper, pepper, thyme – and we have a ripper of a pinot noir that goes savoury and structured. Very fresh feeling, too. The name would suggest something more loose-knit and easygoing, this is serious architecture and savouriness instead. And great for it. A distinct pinot noir that may polarise some for its herbal lean and veins of minerally tannin, but it is compelling.
