Perfumed, floral and fruity on the nose and then dry and bitey (in a good way) on the palate. Brine, lime rind, chalk and suggestions of tutti-fruiti flavour get the job done. There's a soft, gum-like texture to the palate too, in a zippy context. This would work well at the lunch table.
