Tasting Notes

Light pressing, with approximately 50% of the stems in the press. The entire alcoholic fermentation takes place in stainless steel vats at a constant temperature of 16°C. Part of the wine then spends five months in French oak barrels (untoasted, steam-broken) on its fine lees, while the remainder is also aged on its fine lees in a concrete tank.
