A selection of high-quality herbs and botanicals macerated in alcohol is added to the RAV 2018 wine base in a process known as ‘one-shot', since they are infused and macerated just once, to elicit maximum intensity of the aromatic properties. The herbs such as gentian and absinthe, are hand-harvested from small sustainable growers in the Alpine areas of the Cuneo Province: the Maira, Stura and Gesso Valleys. Equally important are the citrus fruits, whose peel is packed with essential oils. The citron comes from the traditional botanical gardens of Lake Maggiore, and the chinotto from Savona on the Ligurian Riviera. Equal care is taken in the selection of non-local flavourings: rhubarb, cloves and vanilla from Polynesia.
