With a vineyard spanning 9 hectares, composed of limestone and marl soils, Vincent predominantly cultivates Sauvignon Blanc (90%) and Pinot Noir (10%) grapes. The average age of the vines is 40 years, with a special plot boasting 90-year-old vines of traditional Sauvignon varieties. This diversity in age and size of the grapes brings complexity and depth to Vincent's wines.
Hand-harvested in small baskets, the grapes are then carefully fermented in temperature-controlled stainless steel tanks with native yeasts.
