Roc Breïa, located in the beautiful Mâconnais region of France, is more than just a winery - it is a vision brought to life by the talented and driven Théo Dancer. Taking after his father, Théo studied at the prestigious Lycée Viticole de Beaune while honing his skills by working part-time with his father at Domaine Vincent Dancer. In 2021, Théo joined the domaine full-time and has already begun making a significant impact.
But Théo's ambitions did not stop there. He also embarked on his own project, Roc Breïa, in the Mâconnais district. This exciting venture was made possible when Théo was invited to visit a mature vineyard in the Bray district. Seeing the potential of the 10-hectare block on a limestone slope, Théo agreed to manage the project under one condition - he would have complete control. And thus, Roc Breïa was born.
With the help of full-time vigneron Bastien Cubillé, Théo has meticulously sculpted the vineyard, bringing the soils and vines back into balance and implementing sustainable practices such as planting cover crops and cultivating inter-vine. In the cellar, Théo's winemaking philosophy is simple - let the grapes speak for themselves. The Chardonnay is whole bunch pressed and fermented in used 500-litre barrels, while the Pinot Noir is vinified with 50% whole bunches. The resulting wines are bottled unfiltered, with minimal intervention and only a tiny amount of sulphur added at bottling.
Théo's dedication to quality is evident in the final product - a selection of the finest barrels, with anything that doesn't meet his standards eliminated from the blend. Instead of conforming to the Mâcon-Bray appellation, Théo has chosen to label his wines as Vin de France, giving him the freedom to pick the grapes at their optimal ripeness.
Roc Breïa is a testament to Théo's talent and his relentless pursuit of excellence. With a maximum of 200 words, it's hard to capture the essence of this ambitious producer, but one thing is for sure - Théo is a young man in a hurry, and we can't wait to see what he achieves next.
