Corullón is the result of meticulous craftsmanship and attention to detail. It is the culmination of 210 tiny parcels of fruit, carefully grown on the cold metal-mineral soils of the mountain slopes above the picturesque village of Corullon. At altitudes ranging from 500 to 1000 metres, these organic vineyards are un-irrigated and biodynamically farmed by hand and horse, ensuring the purest expression of the land.
The vines used in Corullón are a testament to longevity, with an age range of 50 to 90 years. This adds depth and complexity to the wine, giving it a unique character that is unrivalled. The grapes are harvested by hand, selecting only the finest fruit to go into the final blend.
The winemaking process for Corullón is a true labour of love. The fermentation takes place in small wooden vats, known as foudres, and the wine is then aged for 14 months in French oak barrels. The first 7 months are spent in new barrels, followed by another 6 months in 2-3 year old barriques and hogsheads, with a mix of foudres and clay vats. This careful ageing process allows the wine to develop its full potential, resulting in a rich and complex flavour profile.
DJP's attention to detail is evident in every aspect of the winemaking process, from the retention of 50% of the stems to the gentle pigeage during fermentation. This allows for a smooth and balanced wine, with just the right amount of tannins and a long, lingering finish.
