Following harvest, select parcels our Estate Chardonnay and Pinot Noir fruit were chilled and then gently pressed separately to tank. Following a short period of cold settling, the cloudy juice was racked separately and underwent fermentation with a neutral yeast strain at moderately cool temperatures. After the completion of primary fermentation, the wine was matured in tank on yeast lees for 3 months to build texture and complexity in the base wine. The final blend consists of 83% Chardonnay and 17% Pinot Noir. An elegant, aperitif style wine with balanced sweetness and acidity.
