Born from a tiny 0.1ha plot of Savagnin in Waurn Ponds, Yellow is Ray Nadeson’s bold homage to the great Vin Jaune wines of France’s Jura. Aged under flor for seven years, it’s golden, nutty, and gently oxidative, with layers of almond, spice, and a saline finish that lingers long. Packaged with a beeswax seal in a rustic Calvados bottle, this is for the oxidative Jura and Sherry lovers!

Tasting Notes

Made predominantly from Geelong grown Savagnin, the grapes were whole bunch pressed and fermented in barrel. After the initial fermentation took place, we let the barrels ullage allowing a natural flor yeast to grow on top of the wine. Over the course of 7 years this flor consumed the alcohol & nutrients in the wine creating nutty, lemon zest flavours. All the while the oxidative ageing created flavours of walnut, almond and mushroom. Mainly from vintages '13, '14 and '15, blended together to balance the youthful zest and aged nutty characters, this is a delicious drop best enjoyed with an aged hard cheese or comté souffle.
