2024 Wicks Estate Riesling Adelaide Hills 6 Pack

Our estate Riesling consists of four distinct clones which were all selective machine harvested on the same day and combined into one parcel. The fruit was destemmed, crushed and chilled followed by gentle pressing and cold settling to clarify the juice. After racking off juice lees the free run was separated into two tanks for fermentation with a relatively neutral yeast strain at low temperatures (14-15°C). One tank was fermented to dryness while the other was stopped with some residual sugar to balance the acidity. The two parcels were then blended to achieve the perfect balance of residual sugar, acid and flavor
