This submerged aging imparts distinct characteristics: smoky, hydrocarbon notes, a rounder mouthfeel, enhanced flintiness and minerality, and a balance of youthful vibrancy and mature complexity. The wine offers intense aromas of petrol, citrus, grapefruit, lemon, honey, peach, and sea breeze. It has a dense, expressive mouthfeel with a rich body and crisp acidity, characteristic of Assyrtiko. This unique aging process creates a wine with a distinct character, combining freshness with complexity. It pairs well with seafood, fish, shellfish, or lamb stewed in lemon sauce.
