This is an exciting experimental wine made by the Gai'a team at their seafront winery on Santorini. The 2020 Santorini Assyrtiko Thalassitis Submerged is aged 20 meters underwater inside metal cages. This process is completely reductive, executed in darkness at cold underwater temperatures and with significant atmospheric pressure, given the weight of the water above. Only 1,000 bottles are produced, and Gai'a sells them mostly in Greece for 150 euros each. Packed inside a wooden case, there is no label, but you recognize this bottle by the marine crustaceans that have formed on the glass. No surprise, the wine appears very reduced and shut down with aromas of gun powder, flint and struck match. Give it time, and I might suggest a double decant to open it up. I put the question mark next to my score because it's hard to know how it will evolve.
