Vincent Couche makes excellent idiosyncratic expressions of Champagne but clearly, he has talent with still wines too. The truth is, and the ultimate test when bubbles are gone, that great sparkling wine is first a great base wine, so it all makes sense that he does well without a second fermentation. 100% Chardonnay, Kimmeridgian limestone and marly clay, aged 2 years in amphora (30%) and oak barrel (70%). Lively and energetic from the get-go. There’s something herbal about it, fennel, almonds, citrus skin. It’s pithy, limey, with a hint of cheese rind, yellow apples, and pears, all laced with salt and cool river pebbles mineral feel. A complete wine with a high pleasure index.
