Equal split of vermentino and fiano from the Alpine Valleys. Wild yeast fermentation, sealed in a single clay amphora on skins for 300 days. Basket-pressed with SO2 to preserve flavour and freshness, and settled for another 6 months on light lees then racked and bottled without filtering or fining. The result is a tremendous wine. Pale rose-gold-straw hue; wafts of wild flowers, lemon honey, lemon barley and savoury spices. While it has texture and beautiful phenolics, natural acidity keep this reined-in.
