Primi, as he is affectionately known by the locals, is a fourth-generation producer of wine in the charming town of Chiclana de la Frontera, Spain. Continuing the legacy of his family, Primi has dedicated his life to crafting exceptional wines that reflect the unique terroir of the region.
The story of the Collantes family's winemaking journey began in the 19th century when brothers Primitivo and Tómas relocated from the Iguña Valley in Santander to Chiclana de la Frontera. They soon acquired a small cellar in town, which today serves as the headquarters of their renowned bodega. Over the years, they expanded their business and acquired prime vineyard holdings in the area, now boasting 39 hectares of organically farmed vines.
While sherry has always been the flagship product of this bodega, it is the Finos and Amontillados that truly stand out. Primi's Ceballos Fino, aged for three years under flor, is a refreshing and simple expression of the Palomino Fino grape, perfect for a leisurely afternoon. The Arroyuelo Fino en Rama, on the other hand, demands more attention. After five years under flor, the best casks are selected and bottled without filtration or clarification, resulting in a beautifully complex and long wine.
Despite the excellence of their sherry range, it was the fresh, un-fortified white wines that stole the show during our tasting. The Matalían, named after the vineyard it comes from, is a perfect representation of the Albariza soil, Palomino Fino grape, and Mediterranean climate of the region. It is a wine that truly evokes a sense of place, highlighting the unique characteristics of the terroir. The Socaire, aged for two years in old Fino barrels, may not have flor or any oxidation, but it still manages to capture the essence of Fino sherry, creating a truly perplexing yet satisfying experience.
