The journey of Minius wine begins with a strict and meticulous selection process of the grapes. Once the grapes reach the winery, they undergo a careful process of selection, destemming, and soft pressing. This attention to detail continues with a cold maceration at 10ºC for 3-4 hours, allowing for optimal extraction of flavors and aromas. After pressing, the grape must undergoes a static settling, further enhancing its purity.
The next step in the winemaking process is the alcoholic fermentation, which takes place in stainless steel tanks at a controlled temperature of 16.5ºC. This ensures that the wine reaches its full potential while maintaining its delicate and complex character.
Before distribution, the wine goes through a process of filtering and bottling, guaranteeing its clarity and stability. But the care and dedication does not stop there. Each bottle of Minius rests in the cellar for 30 days, allowing it to mature and develop even further before reaching the hands of wine enthusiasts.
